Matcha
Matcha is a finely ground powder made from green tea leaves. It has a unique earthy umami flavour, non-bitter taste and vibrant green color. The leaves are a dark green as the plant is grown in the shade.
Matcha is a central part of traditional Japanese tea ceremonies, where the preparation, presentation, and sipping of matcha is a meditative experience.
Not only does it make for an exciting food or beverage, Matcha tea has potential benefits including assisting metabolism, antioxidants, preventing Cancer, bone health, stress-relief, heart health, skin health and energy.
Where is your Matcha from? - Our pure Ceremonial Matcha comes from Higashiyama, Nisaka, Kakegawa City (掛川市) which is a coastal city area in Japan's Shizuoka prefecture. Geographically, our farm sits centrally toward the Southern end of Japan.
The area is surrounded by the Southern Alps which create an ideal terrain for Matcha leaves to grow. The area is fondly known as ‘`above the clouds.'' A near constant fog acts as a natural cover that blocks UV rays, making the tea leaves darker green and producing high-quality tea leaves rich in flavor. Ideal temperature ranges create a nutrient-dense soil which is ideal for growing tea plants. Tea cultivation has been practiced in the area for more than 150 years, making the location well-known for growing Japan’s most beautiful tea leaves.
Our Matcha suppliers are a small family-owned farm known for their multi-generational Matcha farming practices. We know them through Japanese friends we have in Australia! We are delighted to have partnered with them, and are grateful for the personal learning opportunities they provide us with.
There are 3 calories per 1 gram of both our pure Ceremonial Matcha and 20 calories per serving of our Ceremonial Matcha Agarve blend.
Our pure Ceremonial Matcha has zero sugar. In our Ceremonial Matcha Agarve Blend, there is 2g of sugar per serving making it a healthy pre-sweetened option.
1. Start by adding 2-4g (approximately 2-3 teaspoons) of Matcha into a bowl
2. Add around 50-60ml warm water (80°C) in the bowl OR alternatively combine with 50-60ml of your milk of choice
3. Whisk your Matcha until a froth forms on the surface (20-30 seconds)
4. To enjoy your Matcha as a Latte, add 200ml of either warm or cold milk and sweetener of your choice (don’t forget to add ice if you’re making an iced matcha)

Our signature ratio: 4g of Matcha cold whisked with 50ml of milk, poured over ice, agave syrup and 200ml of milk.

Our Matcha is made from the highest quality ceremonial-grade powder.
Our Matcha has a complex flavour profile with a unique earthy umami flavour and very little bitterness. This is accompanied by a smooth and creamy natural sweet nuttiness and a subtle underlying sweetness.
As a matcha lovers, we can comfortably say that matcha is an acquired taste that takes cultivation. We reccomend following our prepartion methods to ensure the best tasting experience.
Matcha is derived from the same tea plant as all other types of teas — camellia sinensis. Green tea for matcha is cultivated in the shade.
Matcha comes from camelliasinensis, the same plant that other tea varieties are derived from. Matcha is grown in the shade, hand picked before being steamed and air dried. This allows for only the most superior parts of the plant to be used - the Tencha.
After this preliminary process, the matcha is graded according t the quality of the tea. It is finally stone ground into finely milled green tea powder.
We also have our special Ceremonial Matcha Agarve blend which is made by combining organic blue agarve with ceremonial-grade matcha. Our agave powder is produced from the Blue Agave Tequilana Weber. 100% derived from Agave nectar with no harmful additives, artificial chemicals or genetically modified ingredients. Our Blue Agave powder is 25% sweeter than refined sugar and is enriched with agave inulin, a prebiotic fiber. This unique combination blend provides a natural sweetness which does not detract from the Matcha flavour.

Ceremonial Matcha is the higest quality Matcha that can be produced. Ceremonial Matcha contains only the freshest, youngest tea leaves which are found on the upper part of the plant. The name is derived from the traditional tea ceremony of Japanese culture.
Matcha quality is indicated by the colour. High-quality Matcha is a vibrant, bright green colour whereas lower quality Matcha has more of a yellow or brown apperance.
